Kidney Beans Green Salad: Tasty Way to Eat your Rajma

Ingredients:

Kidney beans (Rajma), cooked-30g

Black eyed beans (Chawli), cooked-20g

Cherry tomato halved- 1 cup

Small cucumbers, thinly sliced without peeling-2 no.

Big onion, thinly sliced-1/4

Black olives, halved-1/4 cup

Green olives, halved-1/2 cup

Colourful bell peppers, diced-1 cup

Low fat paneer- 3-4 small cubes crumbled

Basil leaves-5-7 no.

For the Dressing:

Extra virgin olive oil-1 Tbsp

Lemon juice- 2 tsp

Mixed herbs- 1 tsp

Minced Garlic- 1-2 cloves

Salt and black pepper- As per taste

 

Method of Preparation

  1. Whisk the dressing ingredients together
  2. Put the beans in a large salad bowl. Add all the other ingredients and toss with a generous amount of the dressing.
  3. Serve fresh.
