Cream of Spinach Soup: Greens Like Never Before
Ingredients:
- Half bunch of spinach
- 1 small onion
- 1-2 cloves garlic
- 1 small potato
- 10-12 soaked cashew nuts
- Salt and pepper to taste
Method:
- In a pan, dry roast the onion and garlic till translucent.
- Steam spinach till soft and potato till done.
- Blend all the ingredients in a blender adding the water from the steam into a smooth consistency and add cashews while blending.
- Add salt and pepper for taste.
